Chef Jackson, Cordon Bleu Chef is serving gourmet wild game cuisine in East Texas
Chef Jackson Bolton is an engaging young man with a noticeable love for his art. Chef Jackson is doing amazing things with wild game here at Hearts Bluff Ranch, things like Applewood smoked and chili rubbed Hearts Bluff duck breast sliced and paired with jicama, balsamic marinated fig and slivered jalapeno, wrapped in applewood smoked bacon and served with a red chili glaze. The duck, is harvested here from the ranch. The bacon is cured here, from wild boar shot here on the ranch. By 2011, apples and spices will be from here as well (fruit trees and garden are still developing as I write this).
Chef Jackson is a graduate of The Cordon Bleu College of Culinary Arts in Austin is a five-star chef with experience and imagination. He works as Sous Chef at Hudson’s on the Bend in Austin. A five star restaurant that specializes in wild game. And wild game cuisine is Chef Jackson’s passion.
He came to Hearts Bluff Game Ranch with a dream to build a unique five star environment for diners in East Texas. He is fast approaching that dream. Within the year, he will be ready to prepare an entire seven course meal from ingredients harvested almost exclusively from the ranch.
Jackson has stocked a hothouse, planted a large vegetable garden, an herb garden, fruit trees, berries, and grapes. He plans soon to start building a refrigerated outdoor trout pond from which he can net a rainbow trout, clean it, prepare it, pair it with other ranch produce, and serve it, all within an hour.
His ideas are extremely ambitious and the results are tremendous. He performs magic in preparing venison, pork, duck, and quail. His meats are seasoned in balanced flavors that are gastronomic masterpieces and melt in the mouth to produce a festival of tastes. Dishes are visually impressive. Some are even vertical, with shaped morsels hovering high above the plate on skewers. Each plate is presented with an array of colors, aromas, and flavors.
Meals are served in the most appropriate surroundings possible. In gentle weather you may be seated outside under a rustic picnic pavilion looking out over a lake as you watch the sunset. When weather closes in, the ranch lodges accommodate parties ranging from a private couples’ retreat to a dining room big enough for 40 guests.
Meals are available by reservation for hunters and non-hunters alike. Your gourmet meal can be coupled with an overnight stay in luxury accommodations or you might choose to just enjoy an evening of food and ambiance before heading home. Jackson has even been known to offer after supper spotlighting excursions for hunters, photographers, and nature lovers.
Wild game cooking classes are another of Chef Jackson’s offerings. He says that teaching is the best way to learn. He hones his skills by showing others how to prepare great meals from the game they harvest while hunting at Hearts Bluff.
